Almond Butter Banana Cookies

For some...or most...the struggle with converting to a  [strict] paleo lifestyle is the absence of sugar in our daily diets. For my boyfriend, his weakness are cookies, pop-tarts, artifically sweetened candy and the list goes on. I found this awesome recipe from Civilized Caveman Cooking  and I am hooked! Give it a try and let me know what you think!


Ingredients:
3 medjool dates, pits removed
2 ripe bananas
1/2 cup almond butter
1 egg
1/2 tsp vanilla extract
1/2 tsp nutmeg
1/2 tsp ground cinnamon
1/2 tsp baking soda
1/2 cup crushed pecans

+ Preheat your oven to 350 degrees (fahrenheit)
+ Add dates to a food processor and pulse until finely chopped
+ Add bananas, almond butter, egg and vanilla extract and process until you have a smooth batter with minimal chunks
+ Add in the nutmeg, cinnamon, baking soda and crushed pecans and mix one final time ensuring an even distrubution of all the ingredients
+ Scoop 1 1/2 tablespoon full batter (medium scoop) onto a parchment paper lined baking sheet leaving room for cookies to spread
+ Bake for 10-12 minutes or until golden brown on the bottom
+ Remove from the oven, let cool on cooling rack and resist the urge to devour!

Notes: These paleo cookies are supposed to be chewy and cake-like. Your batter will slightly be runny but will still bake.
