Spicy Coconut Chicken - Hinalang Na Manok

Spicy Coconut Chicken, respectfully referred to as Hinalang na Manok, originated from Bohol province of the Phlippine Island. This spicy dish is a combination of chicken cooked in coconut milk with plenty of fresh chili, onion, ginger and whole peppercorns. A mouth-watering dish that will surely perk you up!


Ingredients:

1 whole chicken, cut into serving pieces
1 medium onion, chopped
1 medium sized ginger, sliced
1/2 tsp whole peppercorns
3 red hot chilies
2 cans coconut milk
1/2 cup water
salt
1 bundle lemongrass

+ In medium sized pot, combine coconut milk, lemongrass, ginger and the chicken pieces and bring to a boil on medium heat.
+ Add the chopped onion and peppercorns.
+ Cover and let simmer for 45 mins to 1 hour or until the chicken reaches an internal temperature of 165 degrees.
+ Season to taste and serve over a bed of Cauliflower Rice!
