Coconut Rice Pudding


I'd like to say that this is a recipe for an "old fashioned rice pudding" but it's really not fair to those looking for an old fashioned recipe and stumble across this instead. This is a departure from the old fashioned rice pudding recipe, it's not as heavy or as creamy but it is still mighty yummy! Nonetheless, I'm really glad I stumbled upon this recipe. It is super easy to make...with just 5 simple ingredients!

Ingredients:

2 cups water
1 cup medium-grain white rice
1 1/2 to 2 cups So Delicious Dairy Free Coconut Milk
1/2 cup sugar
*ground cinnamon or nutmeg for added flavor and garnish (optional)

+ In a saucepan over medium heat, combine water and rice and bring to a boil.
+ Cover and reduce heat to low and simmer for 15 minutes.
+ Remove saucepan from heat and let sit, covered, for 5 minutes.
+ Add milk and sugar to cooked rice, stirring well.
+ Return saucepan to stove. Cook over medium heat, stirring continuously for 15 to 20 minutes or until thick and creamy. (If pudding is too thick, thin with a little more milk until desired consistensy.)
+ Remove from heat and stir in vanilla extract.
+ Let cool slightly before serving. :)
