Ground Beef, Kale & Sweet Potato Jumble

Rachel Ray got nothing on this 30 minute meal...heck...you can probably whip this in less! Just prep the ingredients...precook the sweet potato and the kale then day of just cook the beef, toss the rest of the veggies, season and ENJOY!


Ingredients:

1 lb ground beef
1 medium sized sweet potato
a "bunch" of chopped kale
2 cloves garlic
2 whole chilis or 1/2 tsp of dried pepper flakes
evoo
1/2 cup water
2 tbsp vinegar
salt and pepper

+ Dice and bake sweet potato in a preheated 350 degree oven for 15 mins
+ In the meantime, brown ground beef in a saute pan on medium heat, once meat is completely browned, remove from the pan along with its juices.
+ In the same pan, heat 2 tbsp of olive oil, crushed garlic cloves and the chilis until the garlic is slightly browned (be sure not to burn the garlic).
+ Add in the kale, vinegar and water, toss a little and let sit covered on medium/low heat for about 5 mins or until all the liquid has evaporated.
+ Toss the potatoes into the pan with the rest of the ingredients, season with salt and pepper to taste and enjoy!
