Spice Crusted Chicken



So I've spent all weekend prepping and planning my household's menu for the week. It's day 1 of our Paleo Challenge and we are making moooooves honey! It's a long list of spicces on the ingredients list but trust me, if you're going to go Paleo, your spice cabinet better be up for the challenge. Today's recipe is sure to impress and is super easy to make for 2 or a crowd of 50!...and worry not...it's spice crusted but on a scale of 1-10, the heat level on these babies are a mere 3.

Ingredients:

1 lb chicken (thighs and legs)
1 tsp cumin powder
1/4 tsp cayenne powder
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp sea salt
1/4 tsp black pepper
5 cloves of garlic (in husk)
1 tsp olive oil or coconut oil

+ Preheat oven to 375°F
+ Mix cumin, cayenne, chili, garlic powder, sea salt and black pepper in a bowl.
+ Pat chicken dry and sprinkle spice mixture generously over the meat.
+ Place chicken on a cast iron pan or baking sheet, throw in the garlic cloves.
+ Bake for 45 mins.
